This is my mom's recipe.. Me too learnt to cook from her only. Same way here in Gujarat, we make fresh toor kachori and also green peas kachori. Main Difference is that in Gujarat people add sugar else masalas are more or less same. Same stuffing I filled in and gave gujiya shape. This is most famous in Gamnagar, Gujarat, they say it "ghughra". And it is served as chat, pouring variety of chutney and sev.

- For stuffing:
- 1 cup boiled green peas
- 1 boiled potato
- 1 tsp oil
- 1 tsp kismis
- 1 tsp kaju
- 1 tsp ginger-chilli paste
- 1 tsp red chilli powder
- 1/4 tsp turneric powder
- 1/2 tsp fennel seeds powder
- 1 tsp garam masala
- 1 lemon juice
- Salt to taste
- 2 tsp fresh coriander leaves
- For outer layer:
- 2 cup all purpose flour
- 1 tsp carram seeds
- 4 tsp oil
- Salt to taste
- Water as required
- Oil for deep fry
- Serving: green chutney / ketchup
Instructions to make Green peas kachori
- Keep the ingredients ready. Crush green peas in a mixture jar. Chop kismis and kaju. Grate the boiled potato for binding.



- Now heat a pan, add oil and saute ginger-chilli paste. Now add all dry masala and then add crushed green peas paste. Also add lemon juice and salt, give it a good mix.



- Now cook on slow flame covering the lid. After that add fresh coriander leaves and let it cool down. Then make lemon size balls.



- Now prepare the dough adding carrom seeds, salt and oil. Mix it well and add little by little water and maje paratha type dough. Give it 10 minutes rest. Now knead it applying oil on palms and cut small balls. Take 1 ball and Roll it like puri, put stuffing and seal it making a kachori.



- Heat the oil in kadhai and fry on medium flame till they become golden brown. Here i have given gujiya shape also from the same material.



- Our green peas kachori is ready to serve. Serve it hot with green chutney or tomato ketchup.
