Ingredients and spices that need to be Make ready to make Three Chillies Khichdi:
- 1/2 cup Toor daal or pigeon pea lentils
- 2 cup Rice any variety
- 1/2 cup Yellow moong daal or green gram lentils
- 4 cups Boiling Water
- 2 Big and thick Green chillies (stuffing variety)
- 1 Green Capsicum
- 2 Red chillies
- 2 Green chillies
- 1 Chopped onion
- 1 potato with skin
- 1 carrot with skin
- 1 tablespoon Ginger garlic paste
- 1 tablespoon Ghee
- 1 tsp Cumin seeds
- 1 tsp Mustard seeds
- 1/4 tsp Hing
- 5- 6 Curry leaves
- 1/2 tsp Turmeric powder
- 1 tsp Coriander powder
- 1 tsp Garam masala powder
- as per taste Salt
Steps to make Three Chillies Khichdi
- First, wash and soak the rice and lentils for an hour. Then wash and clean the capsicum and big chillies. Remove seeds, tops and ends of the chillies to tone down the hot taste. Remove seeds from capsicum and cut both in medium sized pieces.

- Then heat a pressure cooker handi. Add the ghee, and pop the mustard and cumin in it. Then add the hing, curry leaves, ginger garlic paste and saute well.
- Add the onions and saute till aromatic. Now add the vegetables, turmeric powder, garam masala powder and turn well.

- Now add big chillies, capsicum, red and green chillies and mix well. Then add the drained rice, lentils and stir cook for 2 to 3 minutes till aromatic. Add salt and adjust spices as per taste. Avoid adding too much of chilli powder as the chillies give hotness and spice.
- Then add boiling water as per your regular requirement and close the lid. When steam starts coming up, put the weight and cook for 4 to 5 whistles.

- When pressure subsides, remove lid and add 1 tablespoon ghee all over. Serve in serving plates, garnish with some curry leaves and chillies on top or you can add your own garnish.
- Serve piping hot with roasted papad and Kadhi. Yummy and delicious and satisfying to the last bite.
