- Take maida,suji,oil,salt and ajwain in a bowl,mix and knead a semi soft dough.Cover and leave for 30 minutes.



- Boil potatoes.Peel and mash.Add all the ingredients of stuffing.Mix well.


- Divide dough into 2parts.Roll one part into a1/4cm thicker spread,Add stuffing on roti,spread on entire surface of roti.


- Roll and cut into 1.5" thick pieces.Press the pieces a little to make disc shaped samose.

- Add 2-3table spoon water to maida to make a slurry.Coat samosa with the maida dip.


- Deep fry samose on medium heat till golden.

- Serve with sauce/chutney.
