Dahi bhallas are almost everyone's favourite. And this is an out-of-the-box recipe and is inspired by an aunty ji, the cook who stayed with us for four days, during the time of marriage, and all the guests in the house went gaga over dahi bhallas made by her. She asked us to use 2 portions of moong dal to 1 portion of urad dal. This way, the bhallas would come out super soft and delicious, she says. This recipe makes use of electric beater to beat the batter until smooth, thick, airy and fluffy. It also makes use of an ice-cream scoop to make it super easy to drop batter into the hot oil and so as to have equal sized bhallas. Here, I have documented the steps required.
Ingredients and spices that need to be Get to make Dahi Bhalle:
- 1 cup Moong dal (yellow moong dal)
- 1/2 cup Urad dal
- 2-3 tbsp Besan (add besan, if your batter goes a little runny)
- 1 tbsp cumin seeds
- 2-3 green chillies, finely chopped
- 1 inch ginger, grated
- 1 sprig coriander leaves
- 2-3 cups chilled curd
- 1-2 tbsp Chaat masala
- As required Tamarind-jaggery chutney (saunth)
- As required Coriander-mint chutney (hari chutney)
- As required Salt
- 1 tsp Red chilli powder (lal mirch)
- 1-2 tbsp Roasted cumin powder (Bhuna zeera masala)
- 1-2 tbsp Chaat masala
- As required Water
Instructions to make Dahi Bhalle
- Soak 1 cup of moong dal, and half a cup of urad dal separately, overnight.
- The other day, pulse them in mixer grinder to a smooth batter. Mix the two.
- Whisk the mixture until thick, smooth, airy and fluffy. You can do this with a whisk manually but that can take a little time. Or, bring your electric beater to use here. Beating the batter with an electric beater will make it all the more fluffy. Add a spoonful or two of besan to make batter a little thick, if required.


- Spice the batter up with cumin seeds, chopped green chillies, grated ginger. Add some raisins and chopped coriander leaves. Mix well.


- Take some mixture with the help of an ice-cream scoop and drop it in hot oil. This way, you will get almost the same size bhallas, and it will also be super easy and fun doing so. Fry these on a medium heat until golden and done.

- To make dahi bhallas, soak the bhallas in warm water for about half an hour, also add some salt to it. Store the remaining in an air-tight container and refrigerate.

- Gently squeeze the bhallas to remove excess water.
- Whisk curd to make it smooth, you can also add little water or ice to the curd. Top the bhallas with whisked and chilled curd, add namak (salt), laal mirch (red chilli powder), bhuna zeera masala (roasted cumin powder) and chaat masala. Pour some saunth and green chutney. Garnish with chopped coriander leaves. Savour to your heart’s content :)
