Steps to make Rava Uttapam with veggies, packed with fruits and dryfruits
- Take 100 gms semolina in a mixing bowl and add 250 ml buttermilk to it, only little at a time. Mix it well and let it soak for 30-45 minutes.

- Meanwhile chop and grate all the required vegetables and add asafoetida, red chilli powder, cumin seeds-coriander seeds powder, sambhar masala and salt as per taste to it. Give a good mix to all the veggies and spices. (Here I have used only white cabbage but purple or red cabbage can also be used. Also if you are preparing non jain recipe, finely chopped onions can be added to this mixture.)

- After 45 minutes, add salt to the semolina batter and mix it well. Check the consistency of the batter and if required, add some water. (Batter should be of pouring consistency but not too thick nor watery, bit thicker than dosa batter.)

- Heat the dosa pan and spread the semolina batter on it to make medium sized uttapam, sprinkle few drops of oil and let it cook for a minute. Then spread the mixture of veggies on the semolina batter, cover the pan with the lid and let it cook for 3-4 minutes at medium flame.

- After around 5 minutes, open the lid, flip the uttapam around, sprinkle oil, place the lid again and let it cook for another 3-5 minutes at slow flame.

- Similarly cook the rest of uttapams and let them cool down.
- On cooling, pack them in kids' lunchbox along with green chutney and tomato ketchup. Also accompany uttapams with 10-12 lychees, 5-6 dates and 5-6 dried figs to make it a complete meal. (You may replace lychees with any other seasonal fruit or your kid's favourite fruit.)
