  1. Kolhapuri masala -
  2. 1 tbsp sesame seeds
  3. 1 tsp poppy seeds
  4. 1 tsp fennel seeds
  5. 1 tsp cumin
  6. 1 tsp whole coriander seeds
  7. 3 dry red chillies
  8. 1 inch cinnamon
  9. 4 cloves
  10. 6 black peppercorns
  11. 2 green cardamom
  12. 1 black cardamom
  13. 1 star anise
  14. 1 bay leaf
  15. 2 tbsp dessicated coconut
  16. Gravy -
  17. 2 large onion
  18. 8 cloves garlic
  19. 2 inch ginger
  20. 3 tomatoes
  21. 1 tbsp cashew nut pieces
  22. 1 tbsp melon seeds
  23. 2 + 2 tbsp oil
  24. 1/2 cup potatoes cut into fingers
  25. 1/2 cup carrots cut into sticks
  26. 1/2 cup green beans cut into 2 inch pieces
  27. 1/2 cup green peas
  28. 3/4 cup cauliflower florets
  29. 1 capsicum cut into sticks
  30. 1 tsp turmeric
  31. 2 tbsp kashmiri red chilli powder
  32. Salt to taste
  33. 1 tsp lemon juice
  34. 2 tbsp fresh cream
  35. 2 tbsp coriander leaves
  36. 2 cup water
  37. Tempering -
  38. 2 tbsp oil
  39. 1 tbsp butter
  40. 1 inch cinnamon
  41. 1 bay leaf
  42. 1 black cardamom

Steps to make Veg Kolhapuri

  1. Add all the spices in a pan under kolhapuri masala except dessicated coconut. Roast everything on low heat. Now add desiccated coconut to it and roast it for half a minute on low heat and turn off the heat. Let everything cool down completely. Add everything to a mixer jar and grind it to a smooth powder.
  2. Prepare all the veggies required for the curry.
  3. Heat two tbsp oil in a pan and all the vegetables except from capsicum and green peas. Saute everything for 3 to 4 minutes on high heat. Now add capsicum and green peas to it and saute it for a minute. Keep the veggies aside.
  4. Now heat two tbsp oil in the same pan and add garlic, ginger and onion. Saute until onion is light pink in colour. Now add tomatoes, cashew nuts, melin seeds and half a cup of water to it and cook it on medium heat until tomatoes are soft. Let it cool down completely.
  5. Now add the onion and tomato mixture into a mixer jar along with half a cup of water and grind it to a smooth paste.
  6. Heat oil and butter in a pan and add cinnamon, bay leaf and black cardamom. Now add turmeric and red chilli powder to it and mix it well. Now add prepared gravy and give everything a good mix. Cook it on medium heat for 5 minutes.
  7. Add 2.5 tbsp of prepared kolhapuri masala to it and mix it well. You can adjust the amount of masala according to your preference. Cook it on medium heat for 3 to 4 minutes then add salt and sauteed vegetables to it.
  8. Mix everything well and add one cup of water to it. Cover and cook until vegetables are just cooked. Make sure that the vegetables are cooked but still crunchy. Now add lemon juice and fresh cream to it and cook it for a minute. Add coriander leaves and turn off the heat.
  9. Serve veg kolhapuri hot along with roti, naan, paratha or rice.
