Kolhapur is famous for growing and farming of hot red chilies and this curry lives up to its name as it has very aromatic and spicy flavor that it gets from a specially blended curry masala powder.   2. 1 tbsp white sesame seeds
  3. 1 tsp poppy seeds

  16. For Gravy :--
  17. 2 Big size chopped onion
  18. 8-9 Garlic cloves
  19. 2 inch ginger piece
  20. 3 Big size chopped tomatoes
  21. 1 tbsp cashew nuts pieces
  22. 1 tbsp melon seeds
  23. 2 + 2 tbsp oil
  24. 1/2 cup chopped potatoes
  25. 1/2 cup chopped carrots
  26. 1/2 cup chopped french beans
  27. 1/2 cup green peas
  28. 1/2 cup chopped cauliflower
  29. 1/2 cup chopped green capsicum
  30. 1/2 tsp turmeric powder
  31. 1 tsp spicy red chilli powder
  32. 1 tsp kashmiri red chilli powder
  33. 1 tsp garam masala
  34. 2 tsp coriander cumin powder
  35. As Per Taste Salt
  36. 150 grams paneer (cheese cottage) pieces
  37. 2 tbsp amul fresh cream
  38. 2 tbsp finely chopped green coriander leaves
  39. 2 cup water
  40. For Tempering :--
  41. 2 tbsp oil
  42. 1 tbsp butter
  43. 1 inch ginger piece
  44. 1 bay leaves
  45. 1 Big black cardamom
  46. ๐Ÿ‘‰ For Garnishing :-- green coriander leaves

Instructions to make Maharashtrian Veg Kolhapuri (Mix Vegetable Curry)

  1. First of all add all the spices of Kolhapuri masala except coconut powder in a pan and roast it on low heat until it smells nice. Now add coconut powder to it and roast it for 1/2 minute on low heat then switch off the gas and allow all the spices to cool completely. Then grind this masala into a fine powder by adding it to the mixer jar.
  2. Prepare by washing and cutting all the vegetables to be added to the curry.
  3. Heat 2 tablespoon of oil in a pan, add potatoes, cauliflower, french beans and carrots to it, saute for 3 to 4 minutes on high gas flame. Now add chopped capsicum and green peas and saute for a minute. Keep the sauteed vegetables aside.
  4. Now in the same pan add 2 tbsp oil and add ginger, garlic and onion and saute till the onion turns pink in color. Now add tomato pieces, cashew nuts, melon seeds and 1/2 cup of water and mix everything well and cook on medium heat till the tomato becomes soft. Allow this mixture to cool completely.
  5. Now add the mixture of onion and tomatoes with half a cup of water in a mixer and grind it to a smooth paste.
  6. Add oil and butter to a pan and add cinnamon, bay leaf and cardamom. Now add turmeric powder, spicy red chilli powder, coriander cumin powder, garam masala and Kashmiri red chilli powder and mix. Then add the prepared onion tomato gravy to it. Mix everything well and cook on medium heat of gas for 5 minutes.
  7. Now add all the prepared kolhapuri masala and mix well. The quantity of spices can be kept more or less as per requirement. Cook on medium flame of gas for three to four minutes and add sauteed vegetables to it and mix.
  8. Now add a cup of water and cover and cook till the vegetables are almost cooked. Be careful not to overcook the vegetables. The vegetables should be fried but crunchy. Now add paneer pieces and salt to this and mix and cook for 1 minute. Now add fresh cream to it and stir well and cook for one minute. Then add green coriander to it and mix and turn off the gas.
  9. Now our delicious and tasty veg kolhapuri sabji is ready to serve...garnish this sabji with green coriander.
