  2. 1/2 tsp mustard seeds
  3. Few Curry leaves
  4. 1 small onion (grinded into paste)
  5. 1 tsp ginger garlic paste
  6. 1 tomato medium size (pureed)
  7. 2 tbsp posto (poppy seeds)
  8. As Required (soaked in grinder jar, in lukewarm water for 30 minutes)
  9. 3-4 cashewnuts (soaked in lukewarm water)
  10. 3-4 green chillies (adjust as per your taste)
  11. 5 potatoes (medium size)
  12. As Per Required (boiled, peeled and diced)
  13. As Per Taste Salt
  14. 1/2 tsp turmeric powder
  15. 1/2 tsp Kashmiri lal mirch
  16. 1/4 th tsp garam masala
  17. As required Water for curry consistency

Steps to make Aloo posto curry

  1. Heat a kadhai with mustard oil.
    Splutter mustard seeds.
    Add curry leaves.
    Then add onion paste. Saute for some time. Then add ginger garlic paste.
    Saute all together till the rawness is gone.
    Next, add tomato puree. Add salt, turmeric powder, and Kashmiri lal mirch
    Mix and cook all together.
  2. Meanwhile, prepare posto paste.
    In the grinder jar having posto and water, add soaked cashewnuts and green chilies. Make a smooth paste.
  3. Now check the masala.
    If you get a nice aroma and masala is leaving oil, then add in the boiled potatoes.
    Add little water and give a nice gentle mix, so that potatoes are nicely coated with the masala.
  4. Continue cooking in slow to medium heat for some time.
    Next, add the prepared posto paste to the potatoes. Reduce heat.
    Add little water and give a nice mix.
    Now cover and cook till the rawness of posto is lost.
  5. Next, add water to make it curry consistency. Continue cooking at medium heat.
    When all the flavours combine well, finish off by adding garam masala.
    Cook on medium heat for some more time.
    By now you will be getting a nice... aroma.
  6. Curry is ready!!
    Serve with rice/ roti
