This Punjabi Chana Masala, also known as Chole Masala, is an authentic North Indian style curry made with white chickpeas, freshly powdered spices, onions, tomatoes and herbs.

  3. 1 cup tomato puree
  4. 1 tsp ginger garlic paste

  9. Salt to taste
  10. 1/4 tsp cumin seeds
  11. 1/4 tsp turmeric powder
  12. 1/2 tsp chili powder
  13. 1/2 tsp Kashmiri mirch powder
  14. 1/2 tsp garam masala
  15. 1 tsp coriander powder
  16. 1/4 tsp anar dana
  17. 1/4 tsp dry mango powder
  18. 2 tbsp oil
  19. Water as per need
  20. Chopped coriander for garnishing

Steps to make Chana masala

  1. Rinse and soak dry chickpeas in about 4 cups water, overnight, or at least 8-10 hours. Drain and rinse them before cooking.
  2. Turn on Saute adjust it to high. Heat oil (or ghee) and add cumin seeds bay leaf, cardamom and cloves. When cumin begins to splutter, add onions paste and saute them for 3-4 minutes.
  3. Add ginger and garlic paste, along with green chilies, and saute for another minute. Now add the tomato, and all the spices along with a few tablespoons of water. Saute well.
  4. Add chickpeas, and water and give it a stir. Close the lid, and pressure cook for 45 minutes.
  5. Turn off the stove and little mashed chickpeas,this make the curry creamy.
  6. Garnish with coriander and Serve with Puri, Naan, paratha or Cumin rice!
