  4. 1/2 cup curd

  7. 1 teaspoon mace powder
  8. 1 tablespoon red chilli powder
  9. 1 tablespoon white pepper powder
  10. 1 teaspoon garam masala powder
  11. 1 tablespoon salt
  12. 1 teaspoon salt for rice
  13. for Whole garam masala:
  14. 2 bay leaves
  15. 3-4 green cardemoms
  16. 2 black cardamoms
  17. 2" cinnamon piece
  18. 4-5 cloves
  19. 1 teaspoon cumin seeds
  20. 1 mace
  21. 1 star anise
  22. 1/2 cup fresh cream
  23. few saffron strands
  24. 1/2 cup milk
  25. 1 teaspoon kewra water
  26. 2 tablespoons lemon juice

Steps to make Awadhi Mutton Dum Biryani

  1. Wash and soak badmati rice for 60 minutes.Slice onion thinly and fry in ghee till golden.Take out half.
  2. Put mutton in the remaining half onion.Add curd lemon juice,salt,all powdered spices,stir well.Add 3cup water,cover and cook on low-medium flame till mutton is soft.
  3. Do not dry the gravy,remove from flame.
  4. Soak saffron in milk and add kewra water.Keep aside.
  5. Boil 1 litre water in a pan add salt and whole spices.Add badmati rice.Cook 80%,drain and keep aside.
  6. Put mutton pan on flame.Add half basmati rice to mutton.Add cream,green chillies,some fried rice and pour saffron milk over rice.
  7. Cover from remaining rice.
  8. Make a dough from wheat flour,seal the edges of pan,cover and cook on lowest flame for 9-10 minutes.
  9. Remove lid after 10 minutes.Garnish with fried onion and serve with salad raita.
