It is a typical Bengali cuisine.We can make it as sweet & savoury .l give this recipe my own twist ,In winters we enjoy lot of green veggies ,so l made it with spinach & lot of veggies .

  1. 1.5 cup plain flour (maida)
  2. 2 tbsp boiled & grinded spinach puree
  3. according to need milk
  4. 1 tsp salt
  5. 1/2 tsp black grinded pepper
  6. For the stuffing :
  7. 1 cup peas
  8. 1 chopped carrot
  9. 1/2 cup chopped mushrooms
  10. to taste salt
  11. 1 tsp black grinded pepper
  12. 1 tsp chat masala
  13. 2 tsp lemon juice

Steps to make Vatana Na Ghugra

  1. Combine maida,salt & black grinded pepper in a bowl.
  2. Add spinach puree to it.
  3. With the help of milk,knead it well to make dough.
  4. Put wet cotton cloth on it & keep it aside for 15 minutes.
  5. Boil all the veggies in a pan.
  6. When they become smooth,stain the water with the help of stainer.
  7. Put all the veggies in a bowl with salt,black grinded pepper,chat masala & lemon juice.Mix well.
  8. After 15 minutes, again knead the dough & make small balls out of it
  9. On a rolling board,put one ball & with the help of rolling pin,make puri out of it.
  10. Take a gujjiya mould & place the puri on it.
  11. Put some vegetables stuffing on one side of puri.
  12. Fold the other side of mould on it.
  13. Remove excess dough from outside but don't throw it, add it in the remaining dough.
  14. Make ghugra from it.put it in a plate & cover it.
  15. Grease the microwave tray with little oil.
  16. Make ghugras from remaining balls & put them in tray.
  17. Put the tray in microwave.
  18. Microwave for 10 minutes.
  19. Take them out & check they are properly cooked or not.Serve hot with any dip of ur choice with tea or coffee.
