Parathas are made in different ways. Here I mixed the ingredients to the flour/ Atta and prepared the dough. Easy and quicker way to prepare the paratha, than stuff them into the dough and roll them.
Let us go to the recipe, inspiration from Sagarika. Made some changes to ingredients.

Ingredients and spices that need to be Make ready to make Zucchini Broccoli Paratha:

  1. 3 cups Wheat flour/ Atta
  2. 1 Zucchini
  3. 1 Carrot large
  4. 1 small Broccoli
  5. 1 Onion large
  6. 2 Green Chillies
  7. 1 bunch Cilantro
  8. 1 tbsp Rice flour
  9. 1 tsp Red Chilli Powder, Coriander Powder, Cumin Powder. Turmeric Powder -1/2 TS
  10. 1/2 tsp Garam Masala -
  11. to taste Salt
  12. 1tbsp Oil

Instructions to make Zucchini Broccoli Paratha

  1. Grate all vegetables after washing them in water. Finely chop Cilantro. Set aside.
  2. Take Wheat flour in a large bowl and add one TBLS of oil and mix along with 1/2 TS salt. Did all the spices mentioned in ingredients along with Rice powder and salt to taste and prepare a hard dough. The moisture in the vegetables was sufficient for me to prepare a stiff dough. Note that the presence of salt will allow release of more water from the vegetables and hence suggest to prepare a stiff dough and rest for 30 minutes, smearing oil over the dough and keep covered.
  3. Now take out a large lemon sized ball of dough and start rolling out thin Parathas, dusting with dry wheat flour. Repeat process and prepare Parathas to be cooked on Tawa.
  4. Heat Tawa and place the rolled Paratha. Flip after a minute and and apply Oil / Ghee of your choice and flip the other side and apply Oil. Flip and cook till light brown spots appear on the Paratha, indicating that it is well cooked. Keep the flame low/ medium heat to allow uniform cooking of the veggies inside.
  5. Serve them hot with Pickle and Curd. Goes well as a lunchbox dish easy to pack and carry. Healthy and tasty.
  6. Want to enjoy with side dishes add a simple Dal or to have a delicious side dish prepare as I did, with Bellpepper Mushroom subzi.

You will also find as your own experience and confidence grows that you will see yourself increasingly more frequently improvising while you go and adjusting meals to fulfill your own personal preferences. If you prefer more or less of ingredients or wish to produce a recipe somewhat more or less hot in flavor you can make simple adjustments on the way so as to achieve this objective. Quite simply you will begin in time to create recipes of your personal. And that is something you wont of necessity learn when it has to do with basic cooking skills to beginners but you'd never learn if you didn't master those simple cooking abilities.
