  2. 1 1/2 cups (one+half cup)sugar
  3. 1/4 cup cornflour
  4. 1 1/2 (300 grams) fresh cream
  5. for paan flavouring:-
  6. 1-4 Calcutta beetel leaves (paan)
  7. 1 tbsp lemon juice
  8. 6 dried dates(kharek), soaked overnight and finely chopped
  9. 1 tbsp fennel seeds (saunf) powder
  10. 1/4 tsp cardamom (elaichi) power
  11. 1/4 cup gulkand
  12. 1 pinch menthol

Steps to make Paan ice cream

  1. Wash the paan leaves and grind them into a fine paste along with the lemon juice in a blender.Sieve through a strainer and keep the juice aside.
  2. Deseed and finely chop the kharek.
  3. Mix together the paan juice kharek,saunf,cardamon powder and gulkand in a bowl keep aside.
  4. How to proceed:-
  5. Dissolved the cornflour in 1/4 cup of cold milk. keep aside.
  6. Place the rest of the milk in a heavy bottomed pan and bring it to a boil.
  7. Add the sugar and simmer for 5 minutes.
  8. Add the dissolved cornflour and simmer for another 5 minutes while stirring continuously,till it is of a coating consistency.
  9. Remove from the heat and allow it cool completely.
  10. Add the paan flavouring mixture and cream to the milk.
  11. Mix well and pour into a shallow dish.
  12. Freeze till slushy.Remove and beat with a whisk until smooth and creamy(or use blender)
  13. Add the menthol and mix well.
  14. Freeze again until firm scoop and serve.
