- 400 gms chicken with bones
- 5-6 tbsp curd

- 1 tsp kasoori methi
- 2 tsp lemon juice

- 2 medium onions sliced
- 8 cashewnuts
- 1 tbsp sesame seeds
- 1 tbsp malai or fresh cream
- 2 green chillies
- Whole spices :
- 3 green cardamoms
- 1 small cinnamon
- 3-4 cloves
- 5-6 black peppercorns
- 1/2 tsp cumin seeds
- For cooking the curry :
- 2 tbsp refined oil
- 1 tbsp refined oil for frying onion and cashewnuts
- 1 tbsp clarified butter
- 1 tsp kasoori methi
- 2 slit green chillies
- 1/2 tsp kashmiri red chilli powder
- To taste salt
- 1/2 tsp garam masala powder
- 1/2 tsp black pepper powder
- 1 tbsp coriander chopped
- To taste salt
- 2 cups water or as needed
Steps to make Reshmi Chicken Masala
- Marinate the chicken for 1 hour or preferably overnight with the ingredients listed under marinade.Add chopped coriander leaves,kasoori methi and mix all.Set aside.


- Slice the onions and heat 1 tbsp oil in a pan.Fry the sliced onions alongwith cashewnuts till light brown.Set aside to cool.Grind it to a smooth paste alongwith 2 green chillies,fresh cream or malai and sesame seeds.Heat ghee and oil in a pan and add cumin seeds and half crushed whole spices.



- When they splutter, add the onion,cashew,sesame and fresh cream paste.Saute for 3-4 minutes on medium to high heat till oil separates.Add the marinated chicken and sear on high heat for 5 minutes. Add 2 cups warm water.Cover and cook for 7-8 minutes in medium flame till the meat is tender.Toss in between to avoid getting chicken stuck at the bottom.



- Add garam masala powder,1 tsp dry roasted fenugreek leaves,1/2 tsp kashmiri red chilli powder,2 slit green chillies,black pepper powder,and toss.Serve hot Reshmi Chicken Masala with tandoori roti,naan or any Indian flatbread or with jeera rice at parties or in a special weekend dinner
