- For chicken marination
- 1/2 kg chicken (curry cut)
- Salt to taste
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1/2 tsp black pepper powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp chicken masala
- 1/2 inch ginger 8-9 garlic cloves and 2 green chillies
- (👆Make a coarse paste in mortar pestle)
- (adjust spiciness as per your preference)
- 1 onion (medium) sliced
- 2 tbsp mustard oil
- 1 tbsp sour curd
- 2 green cardamoms
- 2 cloves
- For making spicy chicken masala
- 50 ml mustard oil/ oil
- 1 bay leaf
- 1/2 tsp cumin seeds
- Cinnamon stick (2 small)
- 1 onion (large) slices
- Marinated chicken
- as needed Salt
- 1/2 tsp Kashmiri lal mirch
- 1/2 tsp coriander powder
- 1 Tomato (large) pureed with green chillies
- Coriander leaves (handful)
- 1/2 tsp garam masala
- 1/4 th tsp black pepper powder (freshly made)
- 1 tsp chicken masala
- Coriander leaves for garnish
- as needed Water
Instructions to make Spicy chicken masala
- In a mixing bowl marinate chicken with the above mentioned ingredients for 1 hour in the fridge.
Next heat oil in a kadhai.


- Splutter cumin seeds. Add bay leaf and cinnamon stick.
Add slices of onion and saute it till brownish.


- Next add the marinated chicken. At medium to high heat fry the chicken.
Give continuous stirring and mixing.


- Next to give a nice colour add Kashmiri lal mirch.
Next add some more coriander powder.


- Mix and cook without covering till chicken is half done.
Then add tomato puree.
Mix and cook at medium heat.


- As the rawness of tomato is lost, cover and cook. Give regular stirring and mixing.
Then add chopped coriander leaves.


- Cover and continue cooking. Add water and continue cooking.



- As chicken is cooked, add garam masala and black pepper powder. Add some more water. Mix and continue cooking.






- Give occasional stirring and mixing. Add some more chicken masala. Give a nice gentle mix.


- Cook the chicken gravy at medium heat with occasional stirrings, till you get a masala type consistency.
As you reach the preferred consistency, put chopped coriander leaves. Mix.
Switch the flame off.
It's ready!!
Serve with soft butter naan and indulge...
