Today I have made Ragda Patties. It's a popular street food of Maharashtra. Ragda is made with dry white peas curry and Patties is made with boiled potatoes.This is basically a chaat, tangy, sweet and spicy in taste. It's loved by all age groups.

Ingredients and spices that need to be Prepare to make Ragda Patties:

  1. For Ragda -
  2. 1 bowl dry white peas
  3. 1/2 tsp turmeric powder
  4. Salt to taste
  5. 4 tbsp oil
  6. 1 black cardamom
  7. 1 " cinnamon stick
  8. 2 bay leafs
  9. 3-4 green cardamom
  10. 1 big onion chopped
  11. 1 big chopped tomato
  12. 2 tbsp ginger garlic paste
  13. 1 tsp coriander powder
  14. 1 tsp turmeric powder
  15. 1 tsp red chilli powder
  16. For Patties -
  17. 3 boiled and mashed potatoes
  18. 2 chopped green chillies
  19. 1 chopped onion
  20. 1/2 cup bread crumbs
  21. Salt to taste
  22. 2 tbsp oil
  23. 3 tbsp sweet tamarin chutney
  24. 3 tbsp spicy green chutney
  25. Little red chilli powder
  26. Chaat masala
  27. 1 tbsp chopped coriander leaves
  28. 2 tbsp pomegranate pearls
  29. 2 tbsp nylon sev

Steps to make Ragda Patties

  1. Wash the white peas and soaked in enough water, overnight or 6-7 hours.
  2. In pressure cooker add soaked peas, 2 cup water, little salt and turmeric powder and cook upto 2-3 whistles.
  3. Making the Ragda -
    Heat oil in a kadai add all whole garam masala, bay leaf saute 2 seconds then add chopped onion and fry well. Now add ginger garlic paste, red chilli powder, coriander powder, turmeric powder and salt, saute for 5-6 minutes until raw smell goes away.
  4. Now add chopped tomatoes and cook until oil release from the masala.
  5. Then add boiled peas with water and cook another 5 -6 minutes.
    Ragda is ready.
  6. Making patties -
    Take a bowl add mashed potatoes, chopped onion, green chillies,salt and bread crumbs, mix everything properly. Then take small portion and make flate tikki round shape as shown in fig.
  7. Heat oil in a tawa, arrange the patties in the tawa and fry the both sides golden brown on low flame. Patties is ready.
  8. Making Ragda Patties-
    Take a serving plate pour the ragda curry, spread some green chutney and tamarind chutney then place the two patties on the curry.
  9. Now spread little red chilli powder,chaat masala, chopped onion, tomato,green chillies.
  10. Lastly add chopped coriander leaves, some pomegranate pearls and nylon sev.
  11. Ragda Patties is ready to serve.
