  1. First prepare potatoes stuffing
  2. For this wash and boil potatoes in the pressure cooker till it turns soft
  3. After cooling, peel off and cut into small pieces or you can mashed potatoes
  4. Now heat oil in a pan
  5. Add mustard seeds and cumin
  6. Once it starts crackling add chopped green chilies and chopped onion
  7. Saute for 2min
  8. Now add salt, red chilli powder, and turmeric powder
  9. Combine all dry spices well
  10. Now add boiled mashed potatoes
  11. Mix everything well, cover, and cook for 3-4min on low flame
  12. Now turn off the flame, sprinkle chopped coriander leaves
  13. Once this mixture cools down, make round shape balls and keep them aside
  14. Now for covering prepare gram flour batter -
  15. For this in a mixing bowl and gram flour (besan) and salt
  16. Gradually add water and whisk with a hand whisk and make a smooth thick batter, it should not be watery
  17. Now add one pinch of cooking soda and whisk again, the batter will rise and increase in quantity
  18. Now deep potato stuffing balls in gram flour (besan) batter, cover completely, then leave in hot oil
  19. Deep fry till outer cover becomes golden in colour and turns crispy
  20. Serve hot batata vada(potatoes Stuffed Fritters)with fried green chilies,sweet tamarind chutney and spicy mint chutney
