- 1 cup Sour buttermilk
- 2.5 cups Water
- 2 tablespoons Besan
- 1 tablespoon Ghee
- 1 tsp Cumin seeds
- 1/2 tsp Hing/ asafoetida
- Curry leaves 10
- 3 Chopped green chillies
- 1 tsp Ginger paste
- 1 tsp Turmeric powder
- 1/2 tsp Chilli powder
- Salt to taste
- 2 tsp Sugar
- Chopped green coriander leaves 2 tsp
Instructions to make Maharashtrian Kadhi (कढी)
- First, mix together curd and besan. Make a lumps free paste with a whisk.
- Then slowly add water and keep whisking to get a smooth running mixture. Keep it to heat on low flame.
- Keep a laddle immersed in the mixture to avoid over flow and separation of water and buttermilk.

- When it starts getting a boil, add chill and turmeric powder, ginger, curry leaves and keep stirring. Pour tempering as it reaches a boil.


- Prepare a tempering of ghee, cumin, hing and pour it on the boiling kadhi. Switch off the flame and cover the pan to let the flavours get in.


- Add salt and sugar at the end, mix well to dissolve it. Garnish with coriander leaves. Serve hot and spicey Kadhi at all meals.
