  4. 1 tsp ginger paste

  9. 3 + 2 tbsp ghee
  10. 1/2 tsp cumin
  11. 1 bay leaf
  12. 1 onion
  13. 1/2 tsp ginger paste
  14. 1/2 tsp garlic paste
  15. 1 tsp red chilli powder
  16. 1 tsp garam masala
  17. 1 tsp kasuri methi
  18. 2 tbsp butter
  19. 2 tbsp fresh cream

Instructions to make Dal Makhani

  1. First of all wash and soak the whole udad and rajma for 6 to 8 hours. You can even use split udad dal instead of the whole udad. If you do not have the time to soak then use split udad dal and a little more water while cooking in the pressure cooker.
  2. Now drain, wash and add it to the pressure cooker along with 4 cups of water, chopped green chillies, ginger, garlic, dry red chillies, tomatoes, salt and 3 tbsp of ghee. Now cook it for 45 minutes on medium to low heat or 8 to 10 whistles.
  3. Let the pressure come down. Udad and rajma should be cooked properly. Mash it lightly with the back of a serving spoon so that it becomes creamy. Add some water to it.
  4. Heat 2 tbsp ghee in a pot. Add cumin and bay leaf to it. When cumin browns, add finely chopped onion, ginger and garlic paste to it and saute it for 2 minutes. Now add red chilli powder to it and add boiled dal to it. Mix everything well and cook it on medium heat for 20 to 25 minutes.
  5. Now add garam masala, kasuri methi, butter and fresh cream to it and give it a good mix. Turn off the heat.
  6. Serve it hot with more butter and fresh cream. It goes really well with roti, naan and jeera rice.
